I got invited to the Que Pasa Factory where I met Desiree Nielsen who is on the gusto T.V channel as The Urban Vegetarian. She demonstrated this queso dip with Que Pasa’s organic tortilla chips. It tasted really great so I decided to make it in the Thermomix to save a lot of time and clean up. Her original recipe is listed above. It’s really got a great zing to it! I really like the Que Pasa tortilla chips as they are non GMO, organic and gluten free.
3T extra virgin olive oil, (I used 30g)
1 onion (100g)
2 carrots (150g)
2 cloves garlic (I used 3)
1 Cup soy milk (250g)
1/2 tsp chili powder
1/2 tsp ground cumin ( I used whole seeds and ground them up as I didn’t have ground cumin)
1/2 tsp salt
1T tomato paste
2 T fresh lemon (Juice of 1 large lemon)
1/2 C nutritional yeast (45g)
1 T Dijon mustard
1/4 cup pickled jalapenos (50g)
1 tsp pickling liquid from jalapenos (20g)
Add carrots, garlic, onion and cumin and chop 5 sec/speed6
Add olive oil
Saute 5 mins/Varoma/speed 2
Add all other ingredients and cook 3 mins/Varoma/speed2
Blend gradually turning up to speed 10 for 30sec-1minute.
Serve over tortillas. YUMMMY!!!!!
