I was looking for a savoury breakfast bite and came across these from Thermofun. They were really easy and tasted quite nice as well as being gluten free and paleo worthy. There are only 4 ingredients in them. I always buy parmesan in a chunk and grate it myself, rind and all in the Thermomix. It saves money and tastes better when it is freshly ground.
6 small zucchini
100 g parmesan grated/speed 10/10 seconds
2T chopped Cilantro
pepper to taste. (I’m not counting this as an ingredient) SPICE
Chop zucchini speed5/7-10 seconds
Add chopped cilantro, egg and pepper
REVERSE 20 sec/ speed 5 until combined
Spoon into mini muffin tins that are well sprayed with oil
Bake at 350F for 30 minutes until brown.
Chill and serve later or serve warm.
